Roasted Cauliflower

WHOLE HERB ROASTED CAULIFLOWER

Something special happens to cauliflower when it gets roasted—and no, we're not just talking about its golden-brown, caramelized edges. This veg takes on a nutty, buttery flavour in the heat of the oven and gets hearty enough to fill you up, especially when it's coated with Kanel Spices herby A Sprinkle of Sunshine mix and topped with breadcrumbs and cheese.

WHAT YOU'LL NEED

  • 1 head of cauliflower, greens removed
  • 2 tbsp salted butter
  • 2 tbsp olive oil
  • 1 tbsp A Sprinkle of Sunshine
  • 1 tbsp breadcrumbs
  • 2 garlic cloves, minced/crushed
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp fresh parsley, chopped

PREPARATION

  1. Preheat oven to 400°F.
  2. Mix all ingredients together in a bowl (except for parsley, parmesan, breadcrumbs, cauliflower).
  3. Place cauliflower in a baking dish, brush with mixture.
  4. Cover with foil, place in oven for 30 minutes. Remove cover, add cheese & breadcrumbs. Bake for another 15 minutes.
