Recipe: Whole Herb Roasted Cauliflower
WHOLE HERB ROASTED CAULIFLOWER
Something special happens to cauliflower when it gets roasted—and no, we're not just talking about its golden-brown, caramelized edges. This veg takes on a nutty, buttery flavour in the heat of the oven and gets hearty enough to fill you up, especially when it's coated with Kanel Spices herby A Sprinkle of Sunshine mix and topped with breadcrumbs and cheese.
WHAT YOU'LL NEED
- 1 head of cauliflower, greens removed
- 2 tbsp salted butter
- 2 tbsp olive oil
- 1 tbsp A Sprinkle of Sunshine
- 1 tbsp breadcrumbs
- 2 garlic cloves, minced/crushed
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp fresh parsley, chopped
PREPARATION
- Preheat oven to 400°F.
- Mix all ingredients together in a bowl (except for parsley, parmesan, breadcrumbs, cauliflower).
- Place cauliflower in a baking dish, brush with mixture.
- Cover with foil, place in oven for 30 minutes. Remove cover, add cheese & breadcrumbs. Bake for another 15 minutes.
